Our very own Jeremiah conducted a cooking class for the various "greens" we're now generating in our most prosperous gardens. Interestingly, our African farmers had never tasted salad greens with dressing and our Bhutanes never mustard greens or collards. Given these farmers also sell their produce at our Farmers' Markets we thought it would prove both a lot of fun and beneficial to sales if we familiarized the farmers to the products they would be selling. Another great day out here. <br />

Below is a recipe for Mustard Greens, they're amazing in flavor. I myself like them raw cut up in salads as they add a wonderful "bite" to regular lettuces. But, wanted to share the below recommendations:<br />

Tips for Preparing Mustard Greens</h3>
<br />
Rinse mustard greens under cold running water and cut into 1/2" slices for
quick and even cooking.
<br />
To get the most health benefits from mustard greens, we recommend letting
them sit for a minimum of 5 minutes before cooking. Sprinkling with lemon juice
before letting them sit may be able to help activate their myrosinase enzymes
and increase formation of beneficial isothiocyanates in the greens.

<div class="SUBTITLE2-WHF">
The Healthiest Way of Cooking Mustard Greens</div>
<br />
From all of the cooking methods we tried when cooking mustard greens, our
favorite is Healthy Sauté. We think that it provides the greatest flavor and is
also a method that allows for concentrated nutrient retention.
<br />
Heat 5 tablespoons of broth (vegetable or chicken) or water in a stainless
steel skillet. Once bubbles begin to form add mustard greens, cover, and Healthy
Sauté for 5 minutes. Toss with our Mediterranean Dressing which includes 1
tablespoon of lemon juice, 1 medium clove garlic (pressed or chopped), 3
tablespoons of extra virgin olive oil, salt and black pepper to taste . Top with
your favorite optional ingredients.

The Annual Milford Garden Club Plant Sale proved a huge success on so many levels. <br />
<ol>
<li>First and most importantly was the most gracious hospitality of our hosts, the <strong><span style="color: #38761d;">Milford Garden Club</span></strong> Ladies. They waved the $25 entry fee and provided all our farmers with beautiful gardening gloves so each now have their own. The smiles when they received these gifts were priceless</li>
<li>The farmers <strong><u>worked</u></strong> the environment, totally new to them, like old hands. Each migrated to their own comfort zone. Some advocating certain seedlings, some helping the customers hold plants while they chose more, some providing oversight of the cash box. All monies go to our farmers as a means to supplement their current income, money they desperately need to raise their family under less dire circumstances. <br />

Seedling sales include varieties of lettuce, mustard, collards, kale, broccoli, tomatoes, peppers, cucumbers, radish, squash, pumpkins. <br />

So far our sale of seedlings to a local farmer; Garden Centers in Amherst, Milford, and Hooksett; as well as our own little farm stand at the end of the driveway are proving most profitable for our Market Farmers. They've worked so very hard and we're all thrilled at this initial success. Needless to say, we can't wait to sell our beautiful produce. <br />

Given this, Gail and Jeremiah naturally assumed no one would show and started planning accordingly over early morning cups of coffe. Soooo very much to do to include:<br />
<ul>
<li>Move all plants from catepillar houses down to the now tilled (not all but enough) garden. But because of the heavy rains, we would have to walk them down rather than destroy the Arel's lawn by driving them in the large truck... probably close to 150 trays of seedlings</li>
<li>Once catepillar houses were emptied, move seedlings from the greenhouse tables out to the catepillar houses and then the established eggplant and peppers onto the tables</li>
<li>Start separating the hundreds of tomato seedlings into their own cells, which also requires filling many trays with fertilized soil. The tomatoes would then be secured in the grow chambers at the end of the day</li>
<li>Start planting some of the greens into the gardens... Wala Walas are now in the ground</li>
</ul>
Just an overpowering list for two people, so we contemplated taking a nap instead. But low and behold two cars filled with 5 BHS students arrived around 9 AM raring to go. There went our naps. By the end of the day, all the above tasks were complete and while we were exhausted and soaked to the bone, the sense of accomplishment and pride abounded in all. All and all, a fantastic day thanks to these kind hearted and spirited Bedford teens. <br />

Our Day 1 Team of 16 Bedford HS students worked incredibly hard to clean up the head house area so we can start selling seedlings and ultimately our harvest right from here. As a group, the only break they would take was a short lunch break. We had to physically tear them away from their various missions when the bus arrived at the end of the day. <br />

Our primary greenhouse is now filled with great life and even more joy thanks to the Bedford High School volunteers. Day 1 artists painted the entire alphabet with fruits/veggies painted for each letter, what great imagination and enthusiasm these young ladies had. AND, we had just fertilized the day before with our organic concoction of fish guts and seaweed so you can only imagine (probably not though) the stench after the heat built up... they were troopers.<br />
<br />
Day #2 artists proved equally enthusiastic and used a combination of impressionist and modern art techniques to enhance the work accomplished the day before. We just provided the "canvas" and paints empowering them to use their imaginations. Needless to say, they exceeded all expectations! AND, the fertilizer stench was just as strong. <br />
<br />
All our artists relatively quickly adapted to the environmental aromas. Sorry Moms, I encouraged the students to give you big long hugs when they got home... oh, the stench on their bodies!<br />

As you learned in our last posting, the Arels made available a large field for planting. Problems: groundhogs and deer are aplenty in the woods behind the field. So, a fence had to go out to attempt to control these garden destroying creatures. The fence is electrified in our attempt to belay the deer and as for the groundhogs... you just don't want to know. <br />
<br />
First to go into the ground will be the Wala Wala onions and then cabbage, swiss chard, lettuce, and other greens. But in the meantime, we continue to seed our warm weather loving plants like various varieties of eggplant, peppers and tomatoes. Right now the greenhouses are FULL, so it's imperative we get them in the ground soonest to make room for our newest seedlings. As always, Jeremiah had ideas and the skills to execute on those ideas. The solution? Mini hoop houses, also referred to as caterpillar houses. These were specifically designed to be mobile so after after the greenhouse season ends they can be transferred to the fields to facilitate better growth of our "heat seeking" plants like tomatoes, peppers and eggplant.<br />

There is so much LIFE in this Bedford Greenhouse. <span style="color: black;">Our farmers are working very hard continuing to seed new vegetables,separating those that have germinated, and trimming our Wala Wala onions which have just flourished. Like our plants, the farmers are also getting accustomed to the growing environment. As they become more familiar with greenhouse procedures, you can see their confidence grow. It's getting exciting! All four chambers are now filled to the hilt. AND, we now have a hardening table that's filling up quickly. Jeremiah thinks we'll exceed our 20,000 seedling goal for sure. In addition to the onions, we now have collards, greens, kale, various peppers, and eggplants propulgating.<br />

We're still working out kinks in our grow chambers but we're getting closer by the day. We discovered some "grounding" issues yesterday while lowering the grow lights. Fortunately, Jeremiah and Roger (neighbor) have come up with a plan to resolve this. In the meantime, Gail's twitches from absorbing low voltage shocks while lowering the lights seem to be subsiding. <br />

So far the plants seem to love this hot weather, but it's a challenge for us human beings working in there. Yesterday it was over 110 degrees! The Walla Walla onions are running amuk! Today it may prove worse. A shade cloth for the top of the greenhouse is on order... it's only March! <br />

Pictured are primarily walla walla (sweet) onions which we're in the process of separating. We started these first because they can be planted in the ground early, mid April, and can be stored after harvest to facilitate a longer farmer's market season. Tomatoes seeds start soonest. <br />

Lots of work to get this program going and fortunately there are wonderful people out there who want to make a difference.... and they are! This is the first of many blog submissions on our social justice initiative here at The Bedford Greenhouse Project. I hope you follow along and pass it on to friends/family for their enjoyment. I also encourage all readers to come out and see the excitement for yourselves. Who knows, your picture could be included when you least expect it.<br />

So, the season begins with a new growing concept. For the third consecutive year I am partnered with the International Institute of NH (IINH) to generate seedlings for local community gardens which support those in need, particularly the refugee population. Teena Hayden, my previous IINH partner, has moved on and I'm now blessed to be working with Jeremiah Vernon (pictured above). <br />

In the past we used radiant heat (hot water tubes) as our primary source of heat to grow the plants. However, this year under the tutelage of Dr. Tomato (pictured above) we have constructed "grow chambers" to provide a more controlled growing environment for our seedlings. Each chamber (there are four this year) is 8' x 5' and 3' in height with 2" very tight insulation to ensure maximum efficiency. Inside each box are four grow lights, an exhaust fan (heat/humidity control), very small portable electric heater, and temperature/humidity controls to ensure optimal growing conditions 24 hours a day... think an incubator for seeds. Presently, one of the boxes is fully operational and we've been very successful at starting out our wala wala onions which will go into the ground in early April. Our goal this year is 20,000 vegetable/herb seedlings. <br />
